'Smoke and Lemons' A working title...
Two decades of experience finally put down on paper in what will be my first book. For many years it’s been gnawing away at me that I should put down in writing some of my recipes and knowledge, so I can share with you a little of what I’ve learned over two decades in professional kitchens, but I never could decide what path to take in telling you my food story.
I wondered if I would be able to find that voice amongst all the other books out there, as I’m not what you might call a celebrity chef, (sure I’ve had some fantastic press, worked at the highest level, and have done a little tv work but that doesn’t amount to much). I hoped that what I had to offer would be of interest to anyone that might read my work.
As always, self doubt kept me back, but I realised that what I now do daily is exciting and different to what I did for over a decade as a Head Chef in London restaurants. People were asking me for recipes, asking for ideas, telling me that they would love to see my style of food in book form. So here we have it… If I can share some of the knowledge I’ve acquired through my work, and inspire you to cook great food for those that you care for in your home, then my mission in writing this book will have been achieved.
